Weird Trend Features Eating Rind of a Montana Fruit

Since the weather change to a more fall season across Montana, it means my golf season is also winding down.  Which apparently, if one were to check my recent browsing history, means I have a lot of time to watch (or waste, depending on how you look at it) reels and videos on the internet.

That said, I am seeing a large amount of pumpkin related videos.  Makes sense, it is that time of year.  But a recent "trend" that isn't new is one I am seeing often and had me wondering how many people are eating this particular fruit rind.

But have you ever used the rind of your pumpkin as part of a dish?

Can You Really Eat the Rind of a Pumpkin Grown in Montana Soil?

Not only can you eat the rind of your pumpkin, but the entire pumpkin plant from seed to mature growth can be consumed.  According to NatureWord, the entirety of it has health benefits:

Pumpkin shoots, leaves, flowers, buds, pulp, seeds and rind are all perfectly edible, not to mention nutritious. Pumpkin rind in particular is an important source of pigmented antioxidants such as lutein, zeaxanthin and various carotenoids.

So, short answer, yes you can eat that rind from your pumpkin.  However, you may want to try to soften it a tad by cooking it.  Most Montana grown pumpkins build up a hardy outer shell.  It may be a little tough and chewy eaten raw.  You can read more about the benefits of pumpkin rind here.
