Cherry Pepsi Cupcakes

Ingredients:

• 1 1/2 C Sugar
• 3/4 C Butter (room temp)
• 4 Eggs
• 1/3 C Milk
• 1/3 C Cherry Pepsi
• 1/3 C Maraschino Cherry Juice
• 2 1/4 Tsp Baking Powder
• 2 3/4 C Cake Flour
• 1 tsp Vanilla

Directions:

• Preheat Oven @ 350 F
• Combine Flour & Baking Powder & Set Aside
• Beat Butter and Sugar Until Fluffy, Add Eggs One At A Time While Beating
• Add Vanilla To Butter Sugar Mix, Slowly Add Milk, Cherry Juice, & Cherry Pepsi
• Slowly Add Four Mixture
• Fill Cupcake Liners to 2/3 Full
• Bake For 18-20 Min

Makes About 2 Dozen

Cherry Pepsi Butter Cream Icing

Ingredients:

• 1/2 C Butter (softened but not melted)
• 1/2 C Shortening
• 4 C Powdered Sugar
• 1 Tsp Vanilla
• Pinch of Salt
• 3 Tbs of Cherry Pepsi
• 2 Tbs Maraschino Cherry Juice

Directions:

• Cream The Butter and Shortening Until Smooth
• Add the Vanilla
• Dissolve Salt in the Pepsi and Cherry Juice
• Mix Cherry Pepsi, Cherry Juice/Salt mixture Into the Creamed Butter & Shortening.
• Put the Mixer on Low, and Add Powdered Sugar Slowly, Mixing Constantly.
• Ice the Cupcakes & Garnish with Maraschino Cherry
